Amazing Chocolate Cake & Icing


Ingredients

  • 125g butter
  • 1 1/2 cups sugar
  • 1 cup warm water
  • 2 tblsp cocoa
  • 2 eggs
  • 1 1/2 cup GF* cake flour (Self Raising Flour)
GF = Gluten Free

Chocolate Icing Ingredients

  • 1/2 cup icing sugar*
  • 1 teasp margarine
  • 1/2 teasp cocoa
  • water
GF = Gluten Free

Chocolate Cake Directions

Preheat over to 180C/350F. Boil butter, sugar, water & cocoa in saucepan. Once boiled remove from heat & leave until luke warm (can put in fridge if you are short of time). On mixer add 2 eggs to liquid ingredients and gradually add flour. Continue until all ingredients combines. Transfer to ovenproof cake tin & cook in moderate oven for 40mins. Enjoy!

Chocolate Icing Directions

* Be careful not to use icing mixture as these are rarely Gluten Free

Combine icing sugar, margarine & cocoa in a measuring cup. Gradually add VERY small amounts of water (eg 1/2 teasp at a time), continue mixing until you have a paste. Using a knife spread over the top of your cake. Sprinkle with coconut. Enjoy!
