Banana Cake
Banana Cake Ingredients
- 125g butter
- 3/4 cup sugar
- 1 tblsp boiling water
- 2 eggs
- 3 medium banana's - super soft
- 1 1/2 cup GF* self raising flour (cake flour)
- 3 tblsp milk
- 1 teasp bi card soda
- pinch of salt
Cream Cheese Icing Ingredients
- 125g cream cheese
- 30g butter
- 1/2 cup sifted icing sugar
- 1 teasp grated lemon
Banana Cake Directions
Preheat oven to 180C/350F. Cream butter & sugar on electric mixer. Add water. Add eggs 1 at a time beating well. Mash banana's in a separate dish until they are free of lumps, then add to butter mixture. Mix well. Add 1/2 the flour & a pinch of salt. Dissolve soda in milk then add to mixture & stir in. Add remaining flour and fold until combined. Pour into square cake tin and bake in moderate oven for 1/2 hour - 40mins. Enjoy!
Cream Cheese Icing Directions
Beat all ingredients until smooth. Using a knife spread over top of cooled cake. Top with grated coconut.
