Chicken Hotpot
Ingredients
- 800gms chicken pieces
- 2 teaspns GF cornflour + extra to coat chicken
- 3/4 cup water
- 1tblspn GF soy sauce (Tamari)
- 2 teaspns GF chicken stock
- 30gms fresh mushrooms - sliced
- 4 chopped shallots/green onions
- 2 teaspns grated ginger
- 1 clove crushed garlic
- 1 teaspn oregano
Directions
Coat chicken in corn flour, fry in oil until golden. Add mushrooms, shallots, grated ginger, garlic, oregano.
Toss over heat for 1 min.
Combine 2 teaspns cornflour, water, soy sauce and chicken stock. Add to chicken, stir until it thickens.

I made this recipe last night and served it on a bed of rice.. a great winter time meal.
