Chocolate Mousse


Chocolate Mousse Ingredients

  • 150g quality dark chocolate
  • 4 eggs separated
  • 1/2 cup thickened cream, whipped
  • 15g butter

Self Saucing Berries Ingredients

  • 1 1/2 cups mixed raspberries, blackberries & strawberries
  • 1/4 cup castor sugar

Gluten Free Chocolate Mousse

Chocolate Mousse Directions

Place chocolate in a heat proof bowl, place over pan of simmering water, stir chocolate until melted, remove from heat. Add butter, stir in egg yolks, 1 at a time; transfer mixture to large bowl, cover, cool.
Beat egg whites in small bowl with electric mixer until soft peaks form. Fold the cream and egg whites into chocolate mixture in 2 batches. Pour mixture into 6 serving dishes (2/3 cup capacity), refrigerate several hours or overnight.

Melt the chocolate in a heat proof bowl balanced over a pan of gently simmering water (make sure the bottom of the bowl is not touching the water). Stir chocolate frequently, once melted remove from heat, stir in butter & cool slightly. Lightly beat the egg yolks, then to the chocolate, stirring after each one.
Beat the egg whites until soft peaks form (make sure all utensils are dry before starting). Fold in half the cream & fluffy egg whites to the chocolate mixture with a metal spoon. Once combined add the second half of the mixture. Don't over mix, the key is to use a light, quick touch.

Spoon into 6 small glass ramekins or liqueur glasses & refrigerate for 4 hours or overnight. Serve with berries & ice cream.

Self Saucing Berries Directions

Wash berries & remove any stems. Cut strawberries in half or to a similar sizes as the raspberries. Sprinkle with sugar & let sit for 1 hour, stirring occasionally.
Serve over mousse & ice cream.

Tip:
Mousse can be prepared a day ahead; cover & store in refrigerator until just before serving.
Berries will last approx 2-3 days when stored in refrigerator in an air tight container.

  • YOur recipe of Chocolate Mousse looks delicious, but the problem is that my kids are allergic to dairy products. That means I cannot use cream. What do you think if I can use 'coconut cream' instead? Please advise. I will appreciate your reply. Thank you

  • You would need to play around with various combinations. I would suggest trying out the coconut cream, or otherwise buying a lactose free cream. Alternatively you could also test out a combination of rice milk, yoghurt, soy creams etc. Good luck :-)
