Chocolate Pudding


Ingredients

  • 60g butter, chopped
  • 75g dark chocolate
  • 1/2 cup milk
  • 3/4 cup GF self-raising flour
       (cake flour)
  • 1/4 cup rice flour
  • 4 tblsp cocoa powder
  • 3/4 cup caster sugar
  • 1 egg, lightly beaten
  • 1/2 cup brown sugar

For Serving

  • icing sugar to dust
  • cadbury flake chocolate
       (curls of milk chocolate)
  • ice cream or double cream

Self Saucing Chocolate Pudding

Directions

Pre-heat your oven to 350F/180C. Lightly grease an oven proof dish with 1 small cube (approx 10g) of melted butter.

In a medium saucepan, add the remaining chopped butter, chocolate and milk. Heat for 3-4 minutes over a medium heat until butter and chocolate have melted. Remove from heat and allow to cool slightly.

Sift gluten free self raising flour, rice flour and 2 tablespoons of cocoa, and add to the chocolate mixture. Then add caster sugar and egg, stiring until combined. Spoon into prepared dish.

Sprinkle with brown sugar and sifted cocoa. Cover with 2 1/2 cups of boiling water by pouring the water on the back of a spoon (this will prevent holes in the mixture).

Bake for 30-40mins or until the pudding is firm to touch. Leave to settle for a few minutes before dusting with icing sugar and chocolate curls.

Serve with fresh ice cream or double cream.
