Cornflake Cookies


Ingredients

  • 110g butter
  • 1 3/4 cups Gluten Free plain flour
  • 1/2 cup saltanas
  • 1 1/2 cups Gluten Free corn flakes
  • 2 tsp baking powder
  • 1/4 cup milk
  • 1/2 cup brown or white sugar
GF = Gluten Free

Directions

Preheat oven to 180C/350F.

Cream the butter and sugar. Fold in Gluten Free flour, sultanas, baking powder and milk until mixture resembles a stiff dough. Place heaps teaspoons into a bowl of crushed gluten free corn flakes, coating the outside of each ball if dough.

Place on a grease baking tray and bake in a moderate oven for 10-15min or until brown.

Makes approximately 14

Tip: Butter should be room temperature. If melted, cookies will not form a proper dough.
