Macaroni Cheese - Tomato


Ingredients

  • 250g GF* pasta (spirals or macaroni are best)
  • 4 slices of bacon or ham
  • 1/2 cup capsicum - chopped
  • 2 tblsp GF* plain flour
  • 1 440g tin of GF* tomato soup
  • 400ml milk
  • 2/3 cup cheddar cheese
  • 1/3 cup cheddar cheese on top
  • 1 tblsp butter
GF = Gluten Free
Gluten Free Tomato Macaroni Cheese

Directions

Preheat oven to 180C/350F.

Fill large saucepan with water & bring to the boil. Add pasta & a dash of salt (optional), boil pasta until soft, drain & set aside.

In same saucepan fry bacon, capsicum & onion in butter. Once cooked remove from heat & mix in flour. Add tom soup, milk & cheese and heat for a few minutes. Once cheese is melted mix in pasta, then transfer to an ovenproof dish & top with remaining cheese.

Bake in a moderate over approx. 1/2 hour or until cheese is browned on top.
