Profiteroles


Ingredients

  • 1/4 cup butter
  • 1/2 cup rice flour or GF plain flour
  • 2 large eggs
  • 1/2 cup water
GF = Gluten Free
Gluten Free Coconut Biscuits

Directions

Melt butter in saucepan, add water & bring to the boil. Remove from heat & add flour. Beat with a wooden spoon until mixture leaves the side of the pan. Add one egg at a time and beat until mixture is smooth & shiny.

Place teaspoons of mixture onto tray lined with baking powder and bake for 25-30min on a moderate over 180C/350F. Do not open door during baking.

Remove from oven & pierce each role with a sharp metal skewer. Allow to cool.

To serve fill each profiterole with sweetened cream & top with hot chocolate sauce.
