Ratatouille
Ingredients
- 1 onion
- 8 tomatoes
- 1 red or green pepper
- 1 zucchini
- 1 aubergine
- 2 tblsp balsamic vinegar
- 1/2 teasp sugar
- salt & pepper to taste
- mixed herbs
Directions
Place everything in frypan and simmer (with lid on) until all vegetables are soft.

Serving Suggestions: Great over polenta squares or with a roast dinner.
